Overview

Clandestina  is your Seat-in and take-out Mexican Restaurant located in the
heart of downtown Toronto. Candestina considers itself a space for tradition, culinary art and
inspirational Mexican gastronomy.
We are currently looking for a full time “Cook” with minimum of 3 years of experience in Mexican
cuisine especially Prehispanic and vegetarian such as Mixiotes de Cordero, Papazules, Cochinita
Pibil, Pastor, Tamales Canarios, Corundas, Pastel Azteca, and the diversity of Moles (Mole Pipian,
Poblano).
The successful candidate will need to
Prepare and cook individual dishes and food
Ensure quality of food
May plan menus, determine size of food portions, estimate food requirements and costs, and
monitor and order supplies
Work with minimal supervision
Demonstrate “traditional “cooking techniques to cooking staff
Maintain inventory and records of food, supplies and equipment
Clean kitchen and work areas.
Must be able to prepare authentic prehispanic and vegetarian Mexican Food,
Tamales,(Canarios,Corundas, Oaxaquenos) , Mixiotes, Pastel Azteca, Enchiladas
(Huastecas, Potosinas Verdes, Rojas y Suizas) and Mole (Pipian and Poblano)
Must manage Buffet service
