Overview

Cocina Mexicana is currently looking for two full time cooks with 1-2 years of work experience in Mexican cuisine, especially Prehispanic food such as Cochinita Pibil, Pastor, Tamales, Enchiladas Huastecas and the diversity of Moles (Mole Pipian, Poblano).
The successful candidate will need to:
Prepare and cook individual dishes and food
Ensure quality of food
May plan menus, determine size of food portions, estimate food requirements and costs, and monitor and order supplies
Work with minimal supervision
Demonstrate “traditional “cooking techniques to cooking staff;
Maintain inventory and records of food, supplies and equipment
Clean kitchen and work areas.
Must be able to prepare authentic Mexican
1-2 years of work experience
