Job Duties:
• Create or modify full menus (dine-in and take-out) on a regular (at least seasonal)
basis to keep Tsuki a forever legendary Japanese restaurant
• Process material, prepare and cook genuine Japanese dishes including Sashimi,
Sushi, Tempura, Sukiyaki, Ramen, Japanese Curry, Robabeyaki, Fried Pork Cutlet,
Soba, Udon, Shabu-shabu, Karakage, Beef Bowl, Onigiri Rice Ball, Yakiniku, and many
more
• Oversee kitchen operations, lead, train and supervise kitchen staff, allocate
workloads, recommend on dish portions
• Teach kitchen staff raw material (salmon, tuna, unagi for example) processing skills,
how to select fresh fruits (avocado, mango and pineapple for example) and vegetables,
and all types of sushi-making techniques in order to make genuine and high-quality
Sushi dishes
• Maintain adequate food material inventory, estimate material and supply cost, order
material, supplies and equipment, help with the restaurant’s expense control
• Recommend to management on menu improvement
• Assign kitchen staff to always maintain clean, sterilized kitchen equipment and space
• Assist with hiring and training of new kitchen staff, train and foster capable staff
members for career advancement
Qualification Requirements for Candidates:
– High school education;
– At least 1 year of work experience particularly in Japanese food cooking experience
(commercial);
– Decent appearance and articulate, confident manner, diligent, friendly and engaging
personality;
– Quick learning capacity for knowledge in regulations in local industry of food service;
– Strong communication skills and pleasant personality, good teaching ability for kitchen staff .
